Assortment of caviar production:


1) Beluga caviar – eggs large (up to 5 mm) - dark gray and silvery.

Caviar has a very delicate, specific taste. Mass fraction of salt from 2.6% to 3.2%.

Shelf life of granular caviar of beluga not more than 12 months from the date of manufacture at storage temperature from minus 4° C - minus 2° C.

Can of glass: 56,8 g., 113 g.

Metal tin: 30 g., 125 g., 250 g., 500 g.                


2) Russian oscietra caviar – eggs medium and large (up to 4mm) - gray, yellowish or brown, black.

Bright taste. Mass fraction of salt from 2.6% to 3.2%.

3) Sterlet caviar – small eggs (up to 2 mm) - gray, dark gray, black.

4) Bester* caviar – Medium eggs (up to 3mm) from silvery gray to anthracite.

* Bester (according to the first syllables of the words beluga and sterlet) - hybrid of two species of fish of the sturgeon family, obtained by artificially crossing beluga with sterlet. Bester combines the rapid growth of beluga and the early maturing of sterlet. Length up to 1.8 m, weight up to 30 kg.


5) Pressed sturgeon caviar (Payusnaya*) – caviar is uniform throughout the mass, the color is from dark gray to black, the consistency is homogeneous of medium softness, the taste is characteristic of the recipe caviar.

Mass fraction of salt 4,5%.

Shelf life of pressed sturgeon caviar is no more than 8 months at a temperature from minus 6° С to minus 2° С or 12 months at storage temperature from minus 18° С to minus 12° С.

* Payusnaya caviar is variety is salted pressed black (sturgeon, beluga or sevruga) caviar, in contrast to granular
